Can you believe Thanksgiving is tomorrow? I was just getting the hang of fall and it feels to soon to say goodbye. Here’s one last hurrah of an insta-party to bid fall farewell. This one’s just the thing for a post-turkey dinner snack. Best wishes for your own Thanksgiving celebrations. I hope the travel is easy and your relatives behave!
I was recently introduced to a delicious drink called a dark and stormy. This is my take on a fall version with the original lime replaced with a splash of apple cider. Spiced rum is really key to this drink, so don’t be tempted to substitute light or dark rum in its place. This is experience speaking. I tried to cheap out with light rum at first and it was ho-hum at best.
Dark and Apple-y, makes one drink
3/4 cup ginger beer (this will be in small bottles near the ginger ale at the grocery)
1/4 cup fresh apple cider
1 ounce spiced rum
Combine all ingredients over ice and serve. Garnish with a cinnamon stick or some allspice berries.
Broiled Goat Cheese and Honey Apple Slices
1 apple, sliced into 1/4″ rounds
1/4 cup goat cheese
2 Tablespoons honey
Pre-heat the broiler and line a baking sheet with aluminum foil. Place apple slices on sheet and top each slice with a bit of goat cheese. Broil for 5 minutes or until cheese starts to brown. Drizzle honey over each slice and serve hot.
