Sometimes great ideas just pop up out of the blue. That happened to me with these delicious crunchy, cheesy, chickeny bites. I was just drinking coffee, minding my own business and then BAM – why not combine all the flavors of buffalo chicken wings with celery and blue cheese into an easy and less messy snack? So I did just that and it proved quite tasty. Along with a yummy refreshing whiskey sour, the husband and I had a nice little insta-party whipped up in no time.
Buffalo Chicken Celery Bites (serves 2)
3 stalks celery, well washed, trimmed, and cut into 2-3 inch pieces
1/8 cup cream cheese, softened
1/8 cup blue cheese salad dressing
3 slices deli chicken, chopped
Hot sauce and pepper to garnish
Line celery pieces on a serving plate. In a small bowl, combine softened cream cheese, blue cheese dressing, and chopped chicken, mixing well. Stuff each piece of celery with the chicken cheese mixture. Drizzle your favorite hot sauce on top and sprinkle on a little fresh ground pepper.
Did you know that all those prepackaged sour mixes at the local grocery are pretty much the same thing? Yes, one has a pretty lady and a guy in a sombrero and is called margarita mix and one shows a high ball glass and is ‘just for’ Tom Collins, but they can all be used as substitutes for each other. So, pick your favorite and just buy one. No need to clutter up the bar with a duplicate ingredient hiding behind marketing. And, you’ll always be ready to whip up a whiskey sour, even if the mix isn’t labeled ‘sour.’
Whiskey Sour (serves 1)
Fill a short fat glass with ice. Pour in 1 ounce whiskey (or more depending on your taste, your company, or how your day went). Top off with sour mix of your choice and stir well. Garnish with an orange slice or a cherry if one’s handy.
